More Details on Hannibal Episode 1.09 - Trou Normand - With Guest Star Lance Henriksen
When it was announced last January that Lance Henriksen would be guest starring in an episode of "Hannibal," his part was "top secret," and even now that a synopsis for the ep (#1.09) has been released, we still don't know much about it. But at least we learned what a "Trou Normand" is!
Before we get into the storyline that was revealed, let us share our newly acquired culinary knowledge courtesy of about.com in an article about traditional French palate cleansers:
In Normandy locals rely on apple brandy as a digestive. Le trou Normand, or the Norman break, is a fiery shot of Calvados right in the middle of the meal. It hits hard and fast, yet is inexplicably effective as a palate cleanser and appetite stimulant. It’s yet to be determined whether it has as successful an astringent property on one’s palate as it does one’s wits – but either way, it does work.

The resurrection of Nick's body enlightens Will (Hugh Dancy) to some of Abigail's secrets, and Hannibal (Mads Mikkelsen) convinces Will to keep some of his own.
